How to grow it

It can be planted in a flower bed or in a pot, but the plant does better in the garden than in a container. It is important that we imitate as best as possible the region of the original occurrence of the plant, which is the Mediterranean. That is, sun, light, heat, light calcareous soil. Hyssop is a perennial plant that is propagated by seeds, soft cuttings in the spring or division of bunches. The seeds are sown in the spring, the transplants are planted in the second half of May. In warmer areas with light soil, we can sow hyssop directly on the bed in April.

We collect and dry

We cut the stem of the plant approximately 10 centimeters above the ground at the time when the hyssop begins to bloom. We harvest fennel twice a year, the first harvest is in June and July, the second in early autumn. For fresh use, we collect the leaves at any time, for drying, we collect the leaves at the beginning of summer. Aromatic leaves are used in small quantities in soups, legume dishes, stews, game and pâtés. Hyssop can be used wherever basil and rosemary are used.
