Summer recipes that will be useful for people with diabetes

Summer is unimaginable without evenings spent in the greenery or in the backyard grilling meat or enjoying other refreshments. To make summer meals more interesting, why not try to find an alternative to the already known dishes?

Grilled vegetable and fish skewers

In one portion: OBV-25; T-8; COALH-8,45,4; Kcal – 202

Necessary ingredients (~for 2-3 servings):

500 g of cod fillets (or any other fish fillets of your choice)

3 tablespoons of freshly squeezed lemon juice

3 cm piece of ginger

1 chili pepper

1 bunch of fresh chopped cilantro (optional greens can be used)

salt, ground black pepper

1 red pepper

1 yellow pepper

½ cauliflower

8 cherry tomatoes

8 brown (forest, chestnut) champignons

1 tablespoon oil for sauce + 1 tablespoon for frying

For preparation: wooden skewers (soak them in cold water for 30 minutes before cooking), blender

Preparation process:

Cut the fish fillets into small pieces. Remove the seeds from the chili pepper, rinse the greens. Blend greens, chili, ginger, a pinch of salt, oil and lemon juice. Pour the resulting sauce over the pieces of fish and mix. Marinate ~ 30 minutes.

Pepper is cut into small pieces, cauliflower is divided into florets.

Alternate vegetables and pieces of fish on the skewer. Brush with olive oil and fry. Bake on the grill ~ 7-10 minutes.

Served with fresh vegetables and side dishes of your choice.

Green pesto

Needed ingredients:

2-3 handfuls of nettles

basil – a tender bun

dill – a small bundle

olive oil, salt

clove of garlic

50 g of seed mixture

Serve with rye bread.

For preparation – a blender

Preparation process:

Wash off the nettles and blend in a blender. Add onions, cloves of garlic, seeds, a pinch of salt, a tablespoon of lemon juice and a little oil. Everything is blended into a homogeneous mass. Serve with pasta, rice, meat or fish dishes, but pesto tastes great spread on rye bread!
