When the temperatures outside are so cold, fresh vegetables are not a good option for a salad. However, this does not mean that you should deprive yourself of the dose of vitamins before the main course, writes Trud bg.

There are different options for winter salad. Some of them include root vegetables, others dairy products such as mayonnaise, and others are made from fresh salads, with citrus fruits and an appropriate dressing.

Although the fresh tomato and cucumber are missing, the winter offerings are also fantastically tasty.

1. Classic Vitmanosis

Necessary products:

• Carrots – 3 pcs.
• Beet – 1 head
• White turnip – 1 head
• Apples – 1 pc.
• Garlic – 2 cloves
• Lemon – ½ pc.
• Nuts
• Salt
• Olive oil

We coarsely grate the carrots, beets, turnips and apples. Add pressed garlic and squeezed lemon juice to them. Mix everything and season with salt and olive oil. Finally, sprinkle with ground walnuts.

2. Salad with pasta, seafood and mayonnaise

Necessary products:

• Macaroni – 250 g.
• Crab rolls – 200 g.
• Yogurt – 1 bucket
• Mayonnaise – 2 tablespoons
• Corn – 1 can
• Tuna fish – 80 g.
• Olive oil – 2 tablespoons
• Lemon juice – 2 tablespoons

You can use different types of pasta – fusilli, diavolino, concile or campanelle. They are boiled, but care must be taken not to boil them. Then they are washed well with cold water to remove the starch from them. When they cool, all the ingredients are mixed and mixed well. Finally, it is seasoned with a little olive oil and lemon juice.

3. Salad with spinach and orange

Necessary products:

• Baby spinach – 125 g.
• Orange – 2 pcs.
• Chickpeas – 150 g.
• Pine nuts/ Walnut – 50 g.
• Halloumi cheese – 200 g.
• Seeds mix 10 g.
• Balsamic vinegar – 3 tbsp.
• Orange peel – 1 tsp.
• Ginger – 1 tsp.
• Honey – 1 tablespoon of honey/maple syrup
• Olive oil – ¼ tsp.
• Salt

It is recommended to make the vinaigrette in a jar. Pour in all the ingredients – salt, olive oil, honey, ginger, orange peel, balsamic vinegar and shake vigorously. Thus, all the ingredients are quickly and easily transformed into a well-balanced marinade.
For the base of the salad, you need to drain and wash the pre-cooked chickpeas well. Peel and clean the orange separately. Fry the halloumi cheese in a pan with olive oil.
Place the spinach in a large bowl and add the chickpeas, orange slices, pine nuts, seed mix and drizzle with the dressing. Mix well and finally place the cheese slices on top.
