Liene Zemīte’s recipe for a special cherry-curd cake with a base of chocolate cookies

Every year on May 4, celebrating the restoration of the independence of the Republic of Latvia, we spread white tablecloths, gather for breakfast, lunch or dinner together and honor our beloved Latvia. Even though this year we are celebrating the holiday in a close family circle, everyone in their own homes, Rimi Gardēži invites you to make it unforgettably beautiful and delicious by laying a white tablecloth and preparing a treat from Latvian products.

Ingredients (for 12 persons, 60 minutes):

  • 350 g chocolate cookies Selga
  • 100 butter
  • 500 g of cottage cheese
  • 100 g of sweet cream
  • 75 g of powdered sugar
  • Zest from ¼ lemon
  • 20 g of vanilla sugar
  • 350 g frozen cherries (or other berries)
  • 100 g of fresh Rasa cheese
  • 100 g of sugar
  • 10 g of gelatin
  • 50 g of water for soaking
  • Berries for decoration

Preparation:

Pour cold water over the gelatin.

Grind 230 g of Selga biscuits into flour and mix with soft butter, spread evenly in a cake form, put in the fridge or freezer until the base hardens. Mix the cottage cheese, powdered sugar, sweet cream, lemon peel and vanilla sugar in a homogeneous mass, arrange on the base of the cookies and smooth. Place the remaining cookies in pairs and place in the refrigerator.

Melt pre-soaked gelatin in a water bath. Blend the cherries. Beat the sweet cream, sugar and fresh cheese until a homogeneous, stiff consistency. Add a little blended cherry to the gelatin, mix. Then all three masses are combined and mixed to a homogeneous consistency. Pour over the cookie and curd layers. Place in the refrigerator until the cream hardens. Decorate with fresh berries.
